Healthy Spring Snacks

As the weather warms up we wanted to some simple and easy treats that taste great any time of day! These recipes use simple ingredients that not only taste good but do good for your body. We encourage you to step into the kitchen this spring and give one of these recipes a try! FRESH MELON SALAD

Ingredients:

  • 1 cantaloupe cut into cubs or balls
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup of fresh basil
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar salt and pepper to taste

Directions:

Combine all ingredients in a bowl and toss to combine

5 INGREDIENT COOKIES

Ingredients:

  • 1 mashed ripe banana
  • 1 cup rolled oats
  • 1/4th cup peanut butter
  • 2 tbsp honey, dash of cinnamon, or sea salt

Directions:

  • Mash banana with a fork and stir in the remaining ingredients.
  • Use a cookie scoop or spoon to scoop 1 inch rounds onto a baking sheet.
  • Bake for8-10 minutes.
  • Allow to cool then enjoy!
 
FREEZER FRIENDLY EGG
 
Ingredients:
  • 6 large eggs
  • 1/4 cup milk (cow, almond, coconut, hemp, etc)
  • 1/2 cup broccoli chopped
  • 1/2 cup shredded cheese
  • Salt and pepper to taste (optional)

Directions:

  • Pre-heat oven to 350 F and line a muffin tin.
  • In a medium bowl, whisk the eggs and milk together, add in the broccoli, cheese, salt and pepper and stir until combined
  • Pour the egg mixture into the muffin tins until 3/4 the way full
  • Bake for 20-25minutes, or until eggs are set and cheese is golden brown.
  • Enjoy!
